ANTIMICROBIAL ACTIVITY OF PRESERVATIVE CHEMICALS AND PLANT EXTRACTS AGAINST BACTERIAL PATHOGENS ISOLATED FROM COMMERCIALLY IMPORTANT PACKED HEALTH DRINKS SOLD IN INDIA

Abstract

Abstract

The microbiological food qualities of some commercially packed fruit juices sold in India were assessed. A total of 7 health drinks samples were collected including Horlicks, Boost, Tank, Rasna, Rasna plus, TAT Gluco plus and Fruite. Samples were screened for pathogenic bacterial counts which ranged from 1.0x101 to 3.0x103cfu/ml. The isolated microbes include vibrio cholera, Salmonella sp, Psedomonas sp, vibrio parahaemolytics, E.coli, Klebseilla sp. The total microbial counts are within acceptable standards for human consumption. vibrio cholera, Salmonella sp, Psedomonas sp, vibrio parahaemolytics, were the most prevalent organisms isolated. All the samples were of acidic pH ranging from 3.20 to 4.50. Titrable acidity was 0.19 to 0.48; sugar (% sucrose) was 0.30 to 13.00. Antimicrobial activity assay of preservative chemicals(Nacl, Sugars, Benzoic acid, Propionic acid, Sodium nitrate) and plant extracts(Tea powder, Aloe vera, Geinger, lemon,) were used against the isolated microbes.
